Using whole, dried kaffir lime zest allows you to, on the one hand, overcome the seasonality of the fruit and, on the other hand, preserve the flavors longer compared to a product that has been reduced to powder. Description

Kaffir lime can be consumed in different forms: fresh fruit, dried zest, whole fresh leaves or dried powder.

Very widespread in Asian cuisine, in Réunion and Mauritius, kaffir lime is still little known in Europe.

With many medicinal, anti-inflammatory and antiseptic properties, it relieves muscle pain as well as insomnia.

How to store Kaffir Lime Zest?

Kaffir lime zest dried do not expire but see their flavor deteriorate over time. The objective is to keep them in the best conditions so that the taste persists as long as possible.

In order to preserve the organoleptic characteristics, it is advisable to store them in a dry, airtight environment, away from light and heat.

How to use Kaffir Lime Zest?

Kaffir lime zest enhances the taste of dishes based on white fish, coconut milk sauces, rougailles. For dessert, it makes it possible to flavor homemade yogurts, flans and goes easily with chocolate. As for drinks, it can be used in infusions, in the preparation of arranged rum and coconut punch.

The dried zest can be used whole, chopped, grated or ground. Be careful, however, not to overdo it. Its fragrance, although delicate, is nonetheless very intense. A small amount is enough.

Tip

  • Add a few pieces of whole zest to your rum mixes.
  • Chop a little to add them to your fish or chicken papillotes.
  • Grate some and simmer them in your coconut milk-based sauces.
  • Grind a little to sprinkle some on your ceviche, yogurts, rice pudding or chocolate mousse.
  • Finally, do not hesitate to combine it with other spices such as ginger, lemongrass, cardamom or galangal.
